Lamb skewer

It is a simple and practical dish. It is well known in the Arab world and in countries such as Türkiye, Iran, India and China.

Although it is a simple dish, it requires the special blend of spices to give it an authentic flavor.

 

Time of preparation:  20 minutes

Ingredients:

- 1 kg boneless leg of lamb

- 1 green and 1 red pepper, cut into 2 or 3 cm squares

- ½ kg medium onions, cut into quarters

- ½ kg ripe tomatoes, cut into quarters

- ½ cup extra virgin olive oil

- Lemon zest

- 2 cloves garlic

- ½ cup chopped fresh cilantro

- 2 bay leaves

- 1 tablespoon

- Salt and ground black pepper 


Preparation:

Remove fat and sinew from the lamb and cut into 4cm cubes. Then, mix the oil, lemon juice, garlic, coriander, turmeric, bay leaves, salt and black pepper. Add the meat and wait for about 12 hours.

Thread the pieces of meat, peppers, onion and tomato alternately onto metal sticks, preferably just the pieces of meat. Then place on a charcoal grill, turning from time to time. Finally serve with white rice and salad.
